Westphalian bag sausage

Westphalian bag sausage is a cooked sausage with nutrients .

The main ingredients are bacon , pork blood and rye meal . To prepare, you let the grist swell in sausage stock. Then it is crushed with the blood in the cutter to a smooth mass. This is mixed with chopped onion and diced bacon, which has previously been mixed with the typical spices nitrite curing salt , pepper , allspice , clove , nutmeg , marjoram and cinnamon . Then you fill the mass into linen bags , from which the name is derived, or pork hips (appendix). These sausages are then cooked and left to cool before consumption.

A similar variant is the raisin bag sausage . For this, the bacon is partially replaced by chopped pork mask and raisins are added instead of rye meal. The sausage is filled into artificial casings and cooked.
