Zundamochi

Zundamochi ( Japanese ず ん だ 餅 ) is a Japanese dessert made from soybeans . It is a regional specialty from Tōhoku and has a striking green color.

origin

Zundamochi are part of the regional cuisine of the Miyagi and Yamagata prefectures , but are also partly prepared in the neighboring prefectures. In recent years, more and more confectionery manufacturers across the country have been offering the dessert, sometimes in newly created variations with adzuki beans or sesame seeds .

Manufacturing

To make zundamochi, cooked green soybeans ( edamame ) are peeled, mashed and mixed with sugar and a little salt. The resulting paste is applied to mochi ( rice cake ) until they are completely coated. Due to the high water content of the mochi, the finished dish should be eaten soon, otherwise it will dry out and lose its taste.
