In kitchen parlance , turning is the division of smaller quantities from a mass ( dough , sausage meat , etc.) and the shaping of round pieces by hand, such as dumplings (potato, bread, quark dumplings), minced meat dumplings ( meatballs , meatballs , Königsberg dumplings etc.) ) or baked goods ( rolls , brioche , donuts , etc.). In some kitchen rules, it is recommended to "twist" dumplings, for example, with wet hands, as the mixture then does not stick to the hands and the twisting is therefore easier.

The shaping of the mass ( farce ) with a special kitchen hand tool ("portioner") or between two tea or tablespoons to form oval cams is called parting in kitchen language .

In the production of pottery on the potter's wheel , turning refers to the shaping of the later standing surface of the vases, plates, etc. Depending on the procedure, the workpiece is placed with the bottom up on the disk and the bottom is turned off, i.e. with a turning iron or a template incorporated the stand profile. Alternatively, a flat bottom can be formed in the damp clay and separated from the disc with a string. In this case there is no standing bead, but the vessel stands on the full surface and tends to wobble.
