history
The distillery on the outskirts of Aberfeldy was founded in 1896 by the brothers John and Tommy Dewar on the banks of the Tay , on the site of the former Pitilie distillery which was operated here by Alexander McLean between 1825 and 1867. Production of whiskey began in 1898. There was no production between 1917 and 1919. In 1925 the distillery went to Distillers Company Limited (DCL) and thus in 1930 to Scottish Malt Distillers (SMD). In 1972 the own malt house was closed and the number of stills doubled to four. The distillery has been part of Bacardi since 1998 .
production
The water at the distillery, which is part of the Highlands region, comes from the Pitilie Burn. It has a mash tun ( mash do ) (6.8 t) of steel and eight fermenting tanks ( wash backs ) (per 34,000 liters ) of Siberian larch . The fermentation time is 65 to 85 hours. Distillation takes place in two wash stills (17,000 l each) and two spirit stills (15,000 l each) which are heated by steam.
