Arroz con Pollo

Arroz con Pollo ( Spanish for "rice with chicken") is a main course that is widespread in Latin America and Spain , especially Andalusia .

It traditionally consists of rice , chicken , garlic , olive oil , red hot peppers , herbs, and spices. A typical spice of Arroz con Pollo is saffron , which gives the dish its characteristic yellow color. For reasons of cost, turmeric is often used instead of saffron , as this spice is much cheaper and also gives the rice its typical yellow color. The preparation is somewhat similar to paella , but long grain rice (and not short grain rice) is used.

The preparation recipes vary somewhat from region to region, but the defining aromas are always based on olive oil, garlic and - in the original - saffron.
