A breaking blade (part of a folding knife ) or a gutting knife / Gekrösemesser is a knife which the hunter (also Schlachter ,) is used around the body cavity to open a killed or slaughtered animal.

Essential features of such a knife are the inwardly curved blade (in contrast to a skinner, for example ) and a blunt point, which is often button-like thickened.

The cutting knife is guided under the skin with the cutting edge up. This technique and the blunt tip prevent cuts into the innards, which are detrimental to the quality of the meat.
