Baden snail soup

Baden snail soup is a traditional dish in Baden cuisine and in a similar form in French cuisine . In addition to snails , the ingredients also include shallots .

For preparation, shallots and garlic as well as finely chopped vegetables such as leeks , carrots and celery are sweated in butter , to which the finely chopped snails are then added. Then the broth is poured on, bound with sour cream and seasoned with finely chopped chervil and white wine .
