Bimbes
Bimbes is a traditional spread made from concentrated pear juice in the municipality of Altendiez in the Rhein-Lahn district in Rhineland-Palatinate .
history
For the production of bimbes, the fruits of a certain type of pear were traditionally used, which were pulled from the kernels brought from there by an Altendiez soldier named Röbel , who had taken part in the Spanish campaign in the Nassau regiment under Napoleon . The pear variety is called gray pear in Altendiez, also known locally as Groobiirn or Bimbes pear .
The Bimbes were very popular in the place, which is why the Altendiez people in the region were also known as Bimbeslecker and the area around Altendiez as Bimbesland. Around 1850 the coat of arms of the municipality , which used to show an ear of corn, was changed and since then shows a fruit-bearing pear tree.
While the pear variety used to be very widespread in Altendiez, it is now threatened with extinction, which is why community members are trying to propagate and replant them.
Manufacturing
To make bimbes, washed pears are brought to a boil and cooked overnight. The juice is then squeezed out and thickened by adding sugar and heating with constant stirring. In another recipe variant, the pears are first peeled, the pods are boiled overnight and then pressed. The juice obtained in this way is thickened by adding the peeled pears and sugar while stirring.
