Blunzengröstl (also Blunzengröst'l ) is a typical Bavarian and Austrian dish.

Blunzn , Blunz'n , also Blunzen in the plural, is the Bavarian-Austrian name for blood sausage ; Gröstl is a derivation of roasting, a regional synonym for roast . In addition to black pudding, boiled potatoes , onions and bacon are the main ingredients, which can be cut in any shape. Typical spices are horseradish , caraway seeds , pepper , marjoram , ginger and garlic . For the preparation you either fry the fried potatoes and then mix them with the other ingredients or cook the ingredients together in a pan. Common side dishes are lettuce, sauerkraut or coleslaw.
