Roast spaetzle soup

Brätspätzleuppe is a soup of Swabian cuisine with a special spaetzle made from sausage meat .

To prepare the sausage meat, a mixture of sausage meat, egg , flour and breadcrumbs , seasoned with salt , pepper and nutmeg or marjoram , is made and scraped from the spaetzle board or poured into slightly boiling salted water with the spaetzle slicer . When they float on the surface, the fried noodles are done, skimmed off and placed in hot meat broth . Depending on the recipe, chopped, steamed onions are added to the mixture or the fried noodles are cooked directly in the broth. It is common to add some chives or fried onions before serving.
