Nettle spinach is a popular dish made from wild vegetables , especially in spring . In the past it was often used as a "substitute vegetable" in times of need, as nettles were always available in large quantities.

Only young nettle shoots are used, which are scalded in boiling water and then immediately cooled in ice-cold water; as a result, the leaves lose their burning effect and the green color of the nettle is also stabilized. Then the cold nettle mass is squeezed out lightly and finely chopped with a knife or passed through. Then you prepare a roux (stoving) with butter and flour and add milk or cream to it , then stir in the nettles and taste the whole thing with salt , pepper , nutmeg and garlic . Eggs and potatoes are very popular as side dishes. Nettle spinach is also served as a side dish to other dishes, and they are often prepared without roux, only with cream.

Nettle spinach is also considered a very healthy food because of its high vitamin and mineral salt content .
