Bread drink (registered trademark) is a liquid food from the company Kanne Brottrunk GmbH & Co. KG , a family business from Lünen (North Rhine-Westphalia), which was founded by the bread drink inventor, the master baker Wilhelm Kanne sen. (* November 17, 1933; † February 3, 2011). Bread drink is made from a special organic whole-grain sourdough bread through lactic acid fermentation . It is a non-carbonated drink. In principle, however, the production of beverages from bread is very old; kvass , for example, is based on it .

Development and manufacture

The idea of ​​developing a drink made from bread came to the master baker Kanne after prisoners of war returned from the Soviet Union reported about the preservation methods of the local population through acidification. He also believed that a "simple" diet could prevent disease. Kanne then experimented with fermenting bread grains for over 15 years until the bread drink was first sold in 1981.

The bread drink is made from bread that is baked from ground wheat, rye and oats, water, rock salt and natural sourdough . The baked bread is mixed with water and the mixture is subjected to a fermentation process that lasts about six months. After the fermentation process is complete, the liquid (the bread drink) is filtered and bottled. What remains is the fermentation substance, which is processed into fermented grain through drying and grinding. In addition to vitamins , minerals , trace elements and enzymes , the finished bread drink also contains around ten million lactic acid bacteria (including Lactobacillus reuteri) per milliliter .

The bacteria produced during the fermentation process are still alive in the bread drink after bottling, since the drink is not pasteurized. It also contains yeast cells , ethanol and lactic acid (1.1 g per 100 g), which is responsible for the sour taste. According to the manufacturer, bread drink also contains minerals, including zinc , iron or magnesium , and contains vitamins A, B1, B2, B6, B12, C, D, E, biotin, niacin, folic acid and pantothenic acid.

There are no neutral, scientifically controlled in vivo studies on humans. Therefore, no proof of effectiveness for alleged healing effects is available so far.

In a statement by several consumer advice centers , it says: “None of the minerals mentioned is contained in the bread drink in an amount that this drink could make a significant contribution to the supply of minerals. (...) The lactic acid contained has a digestive effect. Whether the advertised 'biologically active substrates' can achieve a special health-promoting effect is not scientifically understandable to this day. "
