Bushman fondue in Namibia

The Bushman fondue ( English Bushman fondue ; Afrikaans Boesman braai ) is a meat fondue that is consumed almost exclusively outdoors. It is a popular tradition in Namibia and South Africa . It can be assigned to the braai .

In a traditional cast iron pot, the potjie (Afrikaans for "potty"), oil, usually peanut or sunflower oil, is brought to the boil over the wood fire or over the embers . Every guest can cook their meat in it. The meat is usually marinated and cut into roughly diced pieces. The high-quality pieces of meat, mainly oryx , ostrich or lamb , are put on a large skewer , also alternating with vegetables , and cooked for as long as everyone feels comfortable. Small flatbreads or balls made from bread dough can also be added to the boiling oil. It is usually served with hot, hearty sauces , potbrood ( bread cooked by the Boers in a cast iron pan on the fire), salads and potatoes . A common variant of the side dish is Mieliepap ( German  corn porridge ).
