The Regulation on butter and other dairy spreads , in the short title butter Regulation (ButtV) governs Germany , the production, processing and marketing , including labeling of milk fats , including butter in addition to the priority EU marketing standards for the EU internal market .

Basics

It is based on a the principles of the Common Market Organization reluctant, exceptional permission of for also relevant for fats Regulation (EC) no. 1234/2007 of 22 October 2007. After that should the EU Member States for spreadable fats complementary national grades determine if they do not discriminate against the agricultural products of other member states. It refers to the definition of terms in Regulation (EC) No. 1234/2007, which describes agricultural products as butter in the form of a solid, plastic emulsion consisting exclusively of milk and / or certain milk products with fat as an essential component of value and with a milk fat content of at least 80% and less than 90%, a maximum water content of 16% and a maximum non-fat milk solids content of 2%. The sales names for milk fats with a lower fat content are also defined there, namely three-quarter butter (60–62% milk fat), semi-fat butter (39–41%) and milk fats X% for all otherwise unrecorded fat contents, where X denotes the specific fat content.

Regulatory content

It defines the term dairy for its purposes as a dairy company with an average daily milk turnover of 500 liters or more ( Section 1a ButtV). It contains supplementary regulations on production (e.g. § 2 Paragraph 2 ButtV, § 14 ButtV) and above all on extended labeling. In particular, it creates a national system of trade classes for butter from dairies, which is partly open to other EU members, and the protection of these brands including the eagle quality mark.

Commercial grade butter may only be made directly from cow's milk or cream or whey cream obtained directly from it ; these must have been pasteurized . Only water and table salt may be used for production. It must be one of the butter types sweet cream, sour cream or mildly soured butter. It no longer regulates the categories German cooked butter or German land butter specified in earlier versions .

German quality butter

The "German branded butter" class is awarded for the highest quality butter. It may only be made from milk from cows or cream obtained directly from it. In the butter test , at least four out of five possible points must be achieved in each tested category. The test must be carried out monthly. It has special butter wrappers as packaging. Butter from other EU member states that meets these quality requirements can be advertised as "branded butter".

German dairy butter

In contrast to the German branded butter, whey cream may also be used in the production of dairy butter . A butter test carried out every 2 months is sufficient for this class of trade. At least three out of five possible points must be achieved in each examined category.
