Cabertin is a red wine variety bred in 1991 . It is a cross between Cabernet Sauvignon and resistance partners. The new grape variety was bred by the Swiss grape breeder Valentin Blattner . The selection took place in the Freytag nursery in the Neustadt / Lachen-Speyerdorf community in the Palatinate (Germany). After several years of trial evaluation, the grape variety was registered by Volker Freytag for plant variety protection in 2002 and for classification in 2017.

The wine is characterized by a dark, ruby ​​red color. In terms of aroma, the variety is closest to Cabernet of all red VB new varieties. The smell clearly shows pyrazines , aromas of paprika, pepper as well as mocha, espresso beans and spicy cigars. The tannin structure is very strong. In late, immature years, the tannins can also turn out green and pungent. In vintages that allow a high physiological maturity, the tannins are soft and harmonious. Overall, a skilful dosage of barrel aging and air access is positive for the development of the wines.

Ampelographic varietal characteristics

In ampelography , the habitus is described as follows:

  • The grapes are narrow, loose and not shouldered. The berry is round, small and covered with an even layer of wax.
  • The time of ripening is about 10-14 days before Cabernet Sauvignon, beginning to mid-October. The growth is upright and very strong. Until late summer, new stingers form , which has a positive effect on sugar formation. Very good frost resistance in winter frosts. Its upright growth ensures even ventilation and tanning in the grape zone without the need for intensive defoliation measures.
  • The grape variety is characterized by very good resistance to Oidium ( powdery mildew ), Botrytis ( gray mold rot ) and good resistance to downy mildew ( downy mildew ). Since budding is relatively late, there is little danger of late frosts. The vine is not very sensitive to winter frosts.
