Cayambe (city)

Cayambe is a town in the province of Pichincha in Ecuador and is located northeast of the capital Quito . Cayambe is the capital of the canton of the same name and had 30,473 inhabitants in 2001 . The city lies at the foot of the Cayambe volcano , the third highest mountain in Ecuador at 5790 m.

Since the 1990s, the canton and city have experienced significant population growth, which is mainly due to the fact that the haciendas surrounding Cayambe have become one of the world's main growing areas for roses .

A regional music style of the same name that is very popular in this area also comes from Cayambe and the surrounding area . In addition, the city is known among locals and tourists for the so-called bizcoches, a pastry specialty. In Colombia, the same word is generally used to describe pastries, but in Ecuador only this type of shortbread is used. Another culinary specialty is the "queso de hoja". The name (leaf cheese) comes from the fact that the cheese flatbread is sold rolled up as a stick and wrapped - and leaves were previously used for this purpose. Nowadays, however, plastic wrap is used.
