use

Chlorophyllin (E 140) as well as its copper-containing complexes (E 141) are used as food additives in foods in general, with few exceptions, for coloring foods with no maximum quantities .

Biological importance

Chlorophyllin is used topically for slow healing wounds without serious side effects. Together with chlorophylls, chlorophyllines can form molecular complexes with carcinogenic substances ( heterocyclic amines from cooked meat or aflatoxin B1 ) and thus block carcinogenic effects. Pre-meal chlorophyllin supplementation was shown to substantially lower a urine biomarker for aflatoxin-induced DNA damage in a Chinese population at high risk of liver cancer from inevitable exposure to aflatoxins from moldy grains and legumes. Whether similar mechanisms also prevent the absorption of nutrients has not yet been investigated.
