Commissiekaas (also Mimolette or Dutch Mimolette ) is a Dutch cheese .

It is made from cow's milk and is orange to orange-red in color. The cheese is a double Edam cheese and mostly has the same shape as this one. The cheese, which weighs between three and four and a half kilograms, is made from pasteurized milk with the typical lactic acid cultures and flavoring microorganisms that are typical for cheese, and is cured. Coloring is done with the help of anatto or carotene .

The cheese is only available in a few cheese shops in the Netherlands, but is much more common in Belgium . In France , the French original can often be found in supermarkets .

The cheese originated from a French imitation of Edam in the 17th century, when Jean-Baptiste Colbert banned the import of Dutch cheese during mercantilism . It was colored to distinguish it from Dutch cheese. The French cheese was called mimolette . This is a raw milk cheese that is stored without plastic rind and mites settle on the natural rind , which contribute to the unique taste. Both types of cheese can therefore only be compared to a limited extent today.
