Coppa (groceries)
Coppa is a traditional Italian specialty made from the neck of pork . It is closely related to Capocollo calabrese , which is made from the same piece of meat.
Manufacturing
The meat is filled into intestines and wrapped in nets, similar to raw ham, first cured and then air-dried , but only for five to six months. In the process, it loses around 40% of its original weight. For longer storage, the Coppa is wrapped in a cloth soaked in white wine , which prevents further drying out and keeps the meat tender. Coppa is mainly cut very thinly and used as cold cuts.

Coppa Piacentina is produced in the Piacenza area and is a protected name under Denominazione d'Origine Protetta (DOP) . The coppa from the province of Parma is protected as Indicazione geografica protetta (IGP) . Coppa is also common in Corsica and the Italian- speaking southern part of Switzerland .
