Crème Chantilly is part of many desserts and consists of sweetened whipped cream , not to be confused with the Chantilly sauce (German name: cream sauce), which is a derivative of mayonnaise .

It can be flavored with other ingredients, for example vanilla , grated citrus peel or orange blossom water .

Legend has it that François Vatel invented and served this creation for the great feast in Chantilly in 1671 in honor of Louis XIV . The sources contradict this, however: the feast was described in detail in the Gazette , the oldest French newspaper. Crème Chantilly or whipped cream are not mentioned there.

The use of whipped cream has been documented since 1650, when sugar was not used. Crème Chantilly was first described in a cookbook by Menon in 1750 . However, he called it Fromage à la Chantilly ("Chantilly cheese"). According to his recipe, crème double was whipped with a little orange blossom water and sugar with grated lemon zest was added. It was not until 1775 that Louis V Joseph de Bourbon, prince de Condé had the so-called Hameau de Chantilly built in the park of Chantilly Castle . It is an idealized village that included a cowshed and a dairy . There, Louis V. Joseph de Bourbon organized banquets in a luxurious atmosphere. In 1784 Henriette von Oberkirch visited there for the second time and wrote in her Mémoires de la baronne d'Oberkirch that the cream was better than any she had eaten before. It is unknown, however, when exactly someone came up with the idea of ​​whipped cream and in what year it was finally associated with the Hameau de Chantilly .
