Croquettes de Vinsobres is a sweet , crispy biscuit from the Drôme department in the south of France . It is made from wheat flour, sugar, eggs, spices (e.g. vanilla ) and a high proportion of whole almonds and is similar to the cantuccini known from the Florence area (although the method of preparation differs slightly).

The pastry was invented in 1908 by Henri Chauvet, the baker in the municipality of Vinsobres near Nyons , and is often served with coffee in the Drôme Provençale and beyond.
