Dailuaine [dal'jʊən] is a whiskey distillery in Charlestown of Aberlour , Speyside , Scotland .

history

The distillery was founded in 1851 by William Mackenzie. When he died in 1865, his widow leased the distillery to James Fleming, a banker from Aberlour. He founded Mackenzie & Company in 1879 together with William Mackenzie's son .

In 1884 Dailuaine was renovated and expanded. At the time it was one of the largest distilleries in the Highlands. Charles Chree Doig built Scotland's first pagoda in Dailuaine in 1889.

In 1891 Dailuaine-Glenlivet Distillery Ltd. founded. In 1898 this company was merged with Talisker Distillery Ltd. to Dailuaine-Talisker Distilleries Ltd. summarized. The Imperial distillery , which Thomas Mackenzie had founded a year earlier, and a grain distillery in Aberdeen were also added.

Thomas Mackenzie died in 1915. A year later the company was by John Dewar & Sons , John Walker & Sons and James Buchanan & Co. bought.

In 1917 a great fire broke out and completely destroyed the pagoda roof. The distillery had to close. It reopened three years later and was taken over by Distillers Company Limited ( DCL ) in 1925 .

In 1960 the distillery was completely renovated. The number of stills has been increased from four to six. A Saladin box replaced the malting floors . The malt has been bought from other malthouses since 1983.

In 1987 Dailuaine was taken over by United Distillers ( UD ).

production

The water of the distillery belonging to the Speyside region comes from Balliemullich and the Green Burn. The malt is sourced from United Distillers-Maltings in Roseisle, Muir of Ord ( Glen Ord ) and Burghead. The distiller has a mash tun ( mash do ) (11.5 t) of stainless steel and eight fermentation tanks ( wash backs ) (per 55,000 l) from larch wood . It is distilled in three coarse stills ( wash stills ) (18,700 l each) and three spirit stills (20,500 l each), which are heated by steam.

Bottlings

Only about two percent of Dailuaine's production is sold as single malt . These are stored exclusively in sherry butts , while whiskey used for blending is stored in former bourbon barrels.

A 16-year-old Dailuaine has been available as an original bottling in the "Flora & Fauna Series" since 1991. Since 1997 it has also been bottled at cask strength.
