The Eichsfeld calf sausage (also called Eichsfeld bladder sausage) is a regional sausage specialty from the Eichsfeld .

Manufacturing

The Eichsfeld calf bladder is made from pork. Your minimum age is 12 months. A special feature is the warm meat processing shortly after slaughtering (warm meat slaughter). The meat fibers can then best absorb the spices . It is seasoned with salt , pepper , sugar and usually also garlic .
