The brewery Em Kölsche Boor is a historic former brewery as well as today's restaurant in Cologne's Eigelsteinviertel and, with over 250 years of tradition, belongs to the "old Cologne economy".

In 1760, the proper brewer Mathias Lölgen ran the brewery in Eigelstein No. 121–123 under the name “Zum Elephanten”.

Friedrich Brückmann then took over the brewery until 1871 and since 1841 has been operating  under the new name "Zur Stadt Aachen" on the occasion of the opening of the railway line of the Rheinische Eisenbahn-Gesellschaft . After that, his business partner and brewer Nikolaus Eichhoz ran the brewery for two more years.

Arnold Brentges took over the brewery in 1873 and handed it over to Albert Odenthal in 1879. In 1879 the brewery and restaurant was renamed "Stavenbräu"; Named "Im Stavenhof" by Albert Odenthal after the neighboring street in the Eigelsteinviertel. The Kölsch "Stavenbräu" was brewed until 1907, since 1903 under the direction of Peter König.

In 1907 Mathias Baum took over the management of the brewery and restaurant, and since then the brewery has been called "Em Kölsche Boor". In 1912, Peter Baum, Mathias Baum's son, transformed the brewery and restaurant into a real Cologne brewery.

In 1953 Gustav Koch bought the ruin of the brewery, which had been badly damaged in the war, from Peter Baum's heirs and rebuilt the brewery. In-house beer production was no longer started in the building and since then Kölsch has been served by the formerly neighboring Gaffel-Kölsch brewery.

The brewery "Em Kölsche Boor" was run between 1983 and 2017 by the married couple Katharina and Frank Koch. Since May 1, 2017, Christian Frings has been running the "Em Kölsche Boor" brewery as the new tenant.

Food

The restaurant "Em Kölsche Boor", which is furnished in a rustic brewery style, mainly offers specialties from the regional Rhenish cuisine , international meat dishes and seasonal dishes such as mussels . Small things are also served with the Gaffel Kölsch, such as “ Halver Hahn ” or “ Kölscher Kaviar ”.
