Enchilada ([ ɛntʃiˈlaːda ] or [ ɛnçiˈlaːda ], Spanish : [ entʃiˈlaða ]) is a traditional Mexican dish that is prepared in many variations, depending on the region and taste. These are filled, soft tortillas made from cornmeal, which are doused with a sauce.

The filling usually consists of meat , preferably chicken, but also scrambled eggs, vegetables or chilli. The sauce is also arbitrary, such as tomato sauce. The most famous enchiladas are prepared with mole , a brown sauce made from chilies and cocoa. The basic ingredients are the tortillas (corn pancakes) and the chilli. Often cream, grated cheese and spring onions or lettuce are added.

In Mexico City , the Enchiladas Suizas ("Swiss Enchiladas"), which are served topped with cheese, are known.

Origin of name

The name comes from Enchilada Spanish verb enchilar and literally means "with chilli - sauce provided."
