Mole ( IPA : [ˈmole]) is a name for various sauces in Mexican cuisine and for dishes based on this sauce. The word mole comes from the word mulli in the indigenous Nahuatl language . This means something like sauce, mixture, mishmash or stew . In the English-speaking world , the spelling molé exists , probably to avoid confusion with mole ( mole ).

In Mexico today, the term is used for a variety of sauces based on different types of chillies and spices. These sauces are sometimes very different. The best known come from the Mexican states of Puebla or Oaxaca , where seven different types of mole are known. Around 35 different ingredients, including chillies, spices , nuts and unsweetened chocolate , make up the mole. Depending on the recipe, a mole can also consist of up to 75 different ingredients.

A well-known dish is mole poblano , for which the sauce is made and served with unsweetened chocolate. Mole is also commonly used in enchiladas or served with chicken. The sauce is often served with rice or potatoes . One dish that is traditionally served at Christmas and Easter is “romeritos”, a vegetable that looks like rosemary and is prepared with potatoes, dried crab cakes and mole.

There is an annual mole festival in San Pedro Atocpan .
