Fajita

Fajita is a Tex-Mex dish , the original version of which consists of grilled and then finely chopped beef , which is served on a wheat tortilla with strips of green chilli . Fajitas are now also made from pork or chicken , and more rarely from shrimp . Side dishes often include sour cream , guacamole , salsa , pico de gallo , cheese and tomatoes .

The Spanish word Fajita is the diminutive of Faja , which can be translated as belt . It referred to the ox's diaphragm as the origin of the meat, known in kitchen language as crown meat or skirt steak .

The dish originally comes from the Texas - Mexican border region on the Rio Grande and was eaten by the cowboys . The crown meat of the cattle was one of the slaughter leftovers that the drovers received free of charge on a day of slaughter. In 1975 the first advertisements for fajitas appeared in Texas newspapers. Today, the term fajita often refers not only to the original recipe, but simply to the type of preparation and / or meat that is served on tortillas.

In restaurants with Tex-Mex cuisine, it is now common practice to serve fajitas with peppers and onions on a hot cast-iron plate. However, this is not the authentic way of serving and eating the dish.
