Fernand Point

Fernand Point (born February 25, 1897 in Louhans , † March 4, 1955 in Vienne ) was a French chef and is regarded as one of the fathers of nouvelle cuisine .

Life

He broke with Escoffier's traditions , for example by leaving his kitchen to chat with guests. He ran the La Pyramide restaurant in Vienne . His students included Paul Bocuse , Alain Chapel , Francois Bise , Louis Outhier, and Jean and Pierre Troisgros .

With a height of 1.92 m, he sometimes weighed 165 kg and had a waist circumference of 169 cm, which he called "Magnum" based on his daily consumption of champagne from a bottle.
