Fileja ( pronunciation : [ fɪˈlɛːja ]) is a Calabrian pasta from the province of Vibo Valentia .

Manufacturing

The dough made of durum wheat semolina and water is rolled out and shaped into approx. 10–20 cm long and 0.5 cm thick sausages that are around a 3–4 mm thick stick (called dinaciulu , dinaculu , dinacu , filejo or filej depending on the region ) wrapped from dried sparto ( half grass ) so that a cavity is created. The stick is then removed. Bronze molds are used in industrial production .

dishes

A classic dish is Fileja con la 'nduja . Other traditional sauces for fileja are made with eggplant , beans , chickpeas or mussels .
