Butcher machine

from Wikipedia, the free encyclopedia

Meat machines are special machines for butchers and the industrial processing of meat and its products (e.g. sausage ).

Meat processing machines place high demands on the design and handling, since there are often hazards very close to the operator (knife blades, dangerous movements, cold, heat, etc.). In addition to the usual questions of mechanical engineering , particular attention must be paid to hygiene in terms of construction. Therefore all contact surfaces have to be suitable for food. The contact and outer surfaces of the meat processing machines are therefore almost entirely made of stainless steel and give the machines a special look.

Until 2004, the accident prevention regulation VBG 19 "Meat Machinery" was a set of rules in Germany that dealt specifically with butcher machines. Due to the harmonization in the European internal market, the A, B and C standards are now decisive for safety-oriented construction due to the Machinery Directive.
