A butcher's shop is a craft business that processes and sells the products of a slaughterhouse after slaughtering into meat and sausage products . Other names for a butcher include butchers , abattoir in Austria butcher or Fleischhackerei and in Switzerland also Metzg .

According to the German Butchers Association, the main reason is the difficulty of finding a successor when the owner leaves the company - the association attributes this to the demanding legal and regulatory requirements that a butcher shop must meet - as well as the migration of customers to supermarkets and discounters as well as the shortage of skilled workers. The meat consumption of the German population has been slowly declining since the mid-1990s and is currently 60 kg per capita per year, which is high in historical comparison (in 1950 it was only 26.2 kg).

Around 60 percent of the employees in the butcher's trade work in sales , often part-time , in order to meet demand peaks and offer long opening times . Over 20% are marginally employed . (As of 2016)

The nationwide professional association of the German butcher's trade is the German Butcher Association (DFV), a voluntary amalgamation of all 15 state guild associations . (There are 15, because on the one hand Bremen and Lower Saxony as well as Berlin and Brandenburg have joint guild associations, on the other hand Palatinate and Rhineland-Rheinhessen are separated.) The DFV represents the interests of the butcher industry on national and international level in committees and through public relations . He is the owner of the so-called "f-mark" (a red and white trademark that shows the lower case letter f in front of a rhombus), with which butcher shops can be identified.

A leading international trade fair for the meat industry, the IFFA (International Meat Industry Trade Fair; the abbreviation is normally no longer dissolved) takes place every three years at the Frankfurt exhibition center .
