Flia
Flia ( Albanian also Fli , outdated also Flija ) is a common dish in Kosovo and parts of northern Albania . It is a pie-like combination of baked dough in layers and dairy products. It is traditionally eaten as lunch with a salad or leavened vegetables ( turshia ).
preparation
The dough is made with flour and water or milk and its consistency is similar to that of pancakes . The filling is usually made from kajmak , a creamy dairy product. Occasionally, however, other places cream or milk products are used, then a cheese - (Alb. Djath ), sour cream - (Alb. Gjizë ) or yogurt filling (Alb. Kos ) with eggs not uncommon. The flia is prepared in layers. To do this, pour the dough in individual jets from the center of the sheet to the edge. Between the "dough rays" there is a small space that is covered with the filling. This is then baked for a few minutes (in the oven at 250 ° C), after which this layering can be repeated as often as desired, depending on the desired height of the flia. There are also varieties made from cornmeal and with spinach.
Traditionally, the flia is prepared in a greased tepsi , a round metal mold often used in Albanian cuisine, over an open fire. A so-called Saç is also used. The saç is a kind of round metal lid that is placed over the tepsi and on which hot ashes or embers are spread. The flia is baked on from above as well as from below.
