Torshi , from Persian ترشی Torshi of Torsh to German  sour , even Turshu , Turshiya , Turschija or Turkish Turşu , Kurdish Tirşîn ( Greek τουρσί toursí , Cyrillic туршия turschija ), is one in vinegar - salt - Lake pickled vegetables - often with garlic  - which today in Southeast Europe , Asia Minor , the Caucasus and the Middle East . Typical ingredients include white cabbage , cauliflower , green beans , carrots , eggplant , paprika , peppers , green tomatoes , Jerusalem artichoke , cucumber, and pumpkin . It is a traditional starter or meze . It was originally consumed in winter as a substitute for fresh vegetables, but is now available all year round.

In Turkey, the court Hamsiturşu (of hamsi, one is anchovy ) in the same way prepared, what with fried herring is comparable.
