His father Georg Erk was a high school professor in Straubing and from 1866 director of studies in Passau. His mother, Magdalene, was the daughter of the wine merchant Jungkunz in Würzburg.

From 1877 he studied mathematics and physics in Munich, passed the teaching examination in 1880 and in 1881 became assistant to Wilhelm von Bezold at the Bavarian Meteorological Central Station in Munich. On the basis of long-term observations by Johann von Lamont at the Munich observatory, he completed his doctorate with the thesis The determination of true daily mean temperatures .

In 1887 he completed his habilitation with the thesis Two studies on the application of a spatial-geometric representation to problems of meteorology , with which the isopleth method was introduced. His interest was the exploration of the higher air layers, where he worked on the border area between meteorology and aviation and also carried out scientific balloon flights.

In 1890 he married Luise, the daughter of the Augsburg chief engineer Engelhardt, with whom Sigmund Erk had a daughter.

In 1893 he became director of the central station. In 1900 he set up the Zugspitz weather station and in the following year became honorary professor at the University of Munich.
