Goose flavors (spread)

Gänseflomen is a spread of the Pomeranian cuisine made from the subcutaneous fatty tissue of the goose .

preparation

Raw goose flavors are placed in a bowl and watered overnight along with a peeled onion. The water is renewed several times. The next day the goose fluff is placed on a board so that the water runs off. When it is dry, the pure fat is scraped from the skins. The fat mass is then turned through the meat grinder (smallest disc) and then stirred through a fine sieve. The mass is then beaten until it looks like snow. Grated onions, thyme , marjoram , salt, pepper and a little cinnamon and vanilla sugar are added. Everything is mixed well with the mixer. The mass is then pressed firmly into a glass or saucepan and left for eight days so that it permeates well before being used as a spread. This spread can be kept for months if it is sufficiently salted.
