Gambas is generally a trade name that does not refer to a specific biological species , but to shrimp that are around 3 to 6 cm in size. Smaller animals are called Camarones or Quisquillas in Spanish , larger Langostinos , although the use of the names is relatively arbitrary. Norway lobsters are called cigalas and differ from prawns in their claws .

Gambas are very easy to prepare. In the simplest case, you bring water to the boil, add the animals (frozen or alive), wait until they turn red and then let the water simmer gently for about two minutes.

Variants of preparation are common in combination with olive oil , garlic , parsley , aioli , lemon and other ingredients.
