He received training as a gardener and worked in the Botanical Garden in Darmstadt . In 1829 he received a six-month scholarship from Grand Duke Ludwig I (Hessen-Darmstadt) , which allowed him to stay in Paris in the Jardin des Plantes. After his return he was involved in the relocation of the botanical garden to the northern part of the Herrngarten. In 1831 he took over the teaching position for botany at the agricultural college of Heinrich Wilhelm von Pabst in Kranichstein. He taught here until 1838.

In 1849, Schnittspahn was appointed court garden director as the successor to his older brother Gottfried Schnittspahn. On February 28, 1855 he received the title of Director of the Botanical Garden.

During his long period of service, Schnittspahn organized several relocations of the botanical garden. So in 1838 on the grounds of the state orphanage near the Kleiner Woog, in 1849 in the Grand Ducal Lustgarten on Wilhelminenplatz and finally in 1864 in the Meiereipark on Frankfurter Strasse and Schloßgartenstrasse.
