Tepertős pogácsák

Grammelpogatscherl ( Hungarian Tepertős pogácsa , Burgenland- Croatian Pogačice ocvarki s ) is a Burgenländisches and Hungarian Festtags- and wine pastry from yeast dough and cracklings (cracklings). Grammelpogatschen (also pogatschen ) are categorized as fine yeast dough baked goods in the Austrian Food Book.

For the preparation, fine yeast dough (refined with cream or wine) is mixed with finely chopped or coarsely minced greens, rolled out and, similar to puff pastry, beaten several times and then rolled out again as thick as a thumb. Then round cookies are cut out, coated with egg and baked in the oven. There are regionally sweet and salty variants.
