Gremolata

Gremolata

Gremolata or Gremolada is a mixture of herbs and spices used in Lombardy cuisine. The classic form consists of flat-leaf parsley , lemon peel ( zest ) and usually garlic , which are chopped and only added to warm dishes towards the end of the cooking time in order to preserve the fresh aromas.

Depending on the recipe and intended use, other herbs such as rosemary , sage and thyme , orange peel or peperoncini , salted anchovies and parmesan are added.

Gremolata is a compulsory part of ossobuco , but it is also used in fish dishes.
