Heather sand
In Heidesand is cookies or biscuits made shortbread . In Northern Germany they are considered traditional Christmas cookies .
The cookies consist of flour , sugar and fat in the form of butter or, alternatively, baking margarine . In addition, eggs , milk , vanilla sugar and baking powder are added, partly grated lemon peel and almond paste . In addition to the classic heather sand made from the ingredients mentioned, there are various variations, for example with ginger and oranges or with rosemary .
In preparation, the butter is melted and lightly browned. After cooling, they are processed together with the other ingredients to make a shortcrust pastry. This is formed into thin rolls, which are then cooled for a while. To prepare it, cut the rolls into thin slices approx. 1 cm thick, place them on a baking tray and bake them in the oven. Sometimes they are sprinkled with sugar before baking or rolled in sugar, this can also be done after baking.
