The Holsteiner Cox (also 'Vahldieks Sämling Nr. 3', 'Gelber Holsteiner Cox') is a cultivar of the cultivated apple (Malus domestica).

The Holsteiner Cox is one of the old apple varieties ; it was raised around 1900 by Johannes Vahldiek in Eutin , Schleswig-Holstein as a seedling of a Cox Orange .

After Johannes Vahldiek's death , the varieties that remained in his garden were checked and named and numbered after him - the variety now known as 'Holsteiner Cox' was given the name 'Vahldiek's Seedling No. 3'. The variety was spread as a popular local variety through the Eutin Horticultural Association in the Eutin region. After the Second World War , the Schleswig-Holstein Chamber of Agriculture tested local varieties with regard to their quality and usability - 'Vahldiek's seedling No. 3' was selected for propagation and testing in horticulture and commercial cultivation because of its properties that surpass the Cox Orange . The variety - known as 'Gelber Holsteiner Cox' - found widespread use in Schleswig-Holstein in the 1950s and was rated "excellent" at the Federal Horticultural Show in Dortmund in 1959 .

The fruit is medium to large in size, green-yellow to red in color and has a tart, aromatic-spicy pulp (with an aroma that comes close to that of the ' Cox Orange ').

The Holsteiner Cox is an autumn apple : it is ripe for picking at the end of September, usually ready for consumption from October and can be stored until December - if stored appropriately, well beyond that. It is widespread in northern Germany and is one of the main varieties of the apple varieties grown in Schleswig-Holstein . The tree is adapted to the cool, humid north German climate, is robust and manages with medium-quality soil.
