The Orxata de xufa ( Valencian / Catalan [ ɔɾʧata ðe ʧufa ], Spanish horchata de chufa, and horchata ) is a soft drink made of tiger nuts , which from the Valencia region originates.

The drink, popular throughout Spain, has its origins in the village of Alboraia . There is nutsedge grown greatly. Your tubers are washed and ground, softened and pressed in several passes. By adding sugar and water to the extract obtained from this then the milky liquid, rich in vitamins and minerals, including arises phosphorus , potassium , vitamin C and vitamin E .

In the Orxateries (milk bars, ice cream parlors) the Orxata de Xufa is freshly prepared and served ice-cold as it spoils quickly. Often warm Fartons , a long pastry to dunk, are offered.

Just like there are pretzel stands in larger German cities, mobile sales stands are set up on many street corners in Valencia, where you can enjoy the Orxata fresh from cups. It is also possible to purchase the tiger nuts in small cloth bags, which you can use to prepare the drink at home.
