Isterband is a Swedish type of sausage that is mainly found in the south-eastern part of the country in the Kalmar area . Ister is the Swedish name for lard .

Isterband is a coarse-grained sausage with a slightly sour taste. The content usually consists of pork and beef , pearl barley , potatoes and possibly broth , the water content must not exceed 60%. The sausage mass is pressed into a middle pig intestine , salted and air-dried, which creates the sour taste. There is also a lightly smoked version. For consumption, the sausage is fried and traditionally served with mashed potatoes and beetroot . Isterband is often part of the Swedish smörgåsbord .
