Cheese thaler

from Wikipedia, the free encyclopedia

Cheese medallions or cheese waffles ( Hungarian Sajtos tallér ) are a popular, traditional savory biscuits from Hungary . The millimeter-thin wafers are baked in waffle irons . The main ingredients are salt, flour, cheese, vegetable fat , milk, egg, sour cream and the respective flavors for different types (for example: cheese, garlic and caraway ). Some manufacturers also use corn ( Kukoricás Tallér ). They are made without preservatives and are different from the different types of chips in that they are baked without fat or oil.

Dozens of producers make the cheese thalers. Some of the better known brands are Urbán & Urbán , Halász , Ágoston or Havas & Gyopár . The best-known manufacturer is called Ziegler . After the fall of the Wall, Peter Ziegler managed to buy back his grandfather's former bread factory, which was state-owned. This resulted in today's  Ziegler Waffelwerke  or Ziegler Ostya . The Hungarian name ostya (comparable to the German ' host ') for waffle indicates that this guild was also active as a wafer baker in the past.

While most cheese thalers show the typical simple diamond pattern of traditional waffles on both sides more or less finely , the thalers from Ziegler are fluted on the back and bear a kind of stamp with a large "W" and a five-pointed crown on the front. They are slightly larger (about 10 cm in diameter) than other thalers, but just as thin.
