Kabsa ( Arabic كبسة, DMG Kabsa ) is a group of rice dishes that are considered traditional local dishes on the Arabian Peninsula and especially in the Arabian Gulf States. Kabsa may originally have come from Yemen .

Three essential ingredients determine the taste and appearance of these dishes: rice , spices and meat. Separately prepared pieces of meat that are boiled, grilled or cooked mandi-style covered with clay are added to the mainly long-grain Basmati. Traditionally, these are mostly pieces of chicken or lamb , more rarely fish or beef.

The taste is largely determined by the spices such as pepper , cardamom , saffron , cinnamon , black lime , nutmeg , bay leaf or cloves . Usually almonds , various nuts and raisins are also added.

Traditionally, the group eats the food by hand from a large vessel.
