Kopanisti

Kopanisti (Greek: Κοπανιστή) is a Greek blue cheese from the northern Cyclades ( Mykonos , Tinos , Andros , Kythnos ) made from raw goat , cow or sheep milk (or mixed). Depending on the type of milk, the taste is strict, buttery or rounded. The cheese is shaped into balls and stored until the balls are covered by a green-bluish brush mold ( Penicillium glaucum ). The cheese is then kneaded so that the mold penetrates the cheese mass and is salted. It has been protected as a product with a protected origin since 1996 .
