Salmon trout is a trade name for large, red-fleshed trout weighing more than 1.5 kg. From a zoological point of view, all trout are salmon fish, together with salmon they even form the genus Salmo and there is no particular species of salmon trout. The following fish can be offered under the name "salmon trout", provided their meat is pink or orange to red in color:

The designation of fish products is legally regulated throughout the EU. In Germany a corresponding directory has been published by the Federal Agency for Agriculture and Food (BLE).

The reddish color of the meat results from the type of food. In salmon trout farming in aquaculture , the addition of the carotenoid astaxanthin in the feed specifically influences the color of the fish meat so that the animals have slightly reddish meat reminiscent of salmon . The salmon trout commercially available today are usually farmed, particularly large rainbow trout .

Trout that have grown up in nature can also ingest this carotenoid through their diet, especially sea trout, which feed on small crabs, among other things. The fish meat of these trout can take on a reddish color.

It is permissible to add carotenoids to the feed of farm animals. In addition to farmed trout, this is also common in salmon farming . Chickens are also given carotenoid-containing feed to intensify the color of the egg yolk. Legally binding maximum quantities apply to the addition of these substances.

Due to their size and feeding, rainbow salmon trout are significantly higher in fat (6 to 10% fat) than wild rainbow trout (2 to 4% fat), but leaner than farmed salmon (15 to 20% fat) or wild salmon (10 to 14% fat) .

Catches up to approx. 12 kg are no exception.
