Ljutenica or Ljutika ( Bulgarian Лютеница , Serbian : Љутеница, which in German roughly means " hot ", ljuto means spicy ) is a Bulgarian, Serbian, Macedonian, Bosnian, Croatian and Romanian preparation made from grilled peppers and tomatoes , which together with salt, Vegetable oil and spices can be processed into a puree / spread . It is one of the traditional ways of preserving peppers and tomatoes for the winter.

At harvest time, the smell of grilled peppers is omnipresent in the villages of Bulgaria and Slavonia , and there are numerous recipes around, which differ from village to village and family to family. Depending on the recipe, carrots , chillies , parsley and occasionally aubergines are also used. Other names / modifications are Ljutika (with onions ) or Apetitka (more spicy ). Dozens of different varieties are available in Bulgarian supermarkets.
