Ajvar

Ajvar or Ajwar , Macedonian and Serbian - Cyrillic Ајвар , Bosnian , Slovenian and Croatian ajvar , Turkish Hajvar or Kavyar or Albanian  Ajvari , is a so-called vegetable caviar, a puree of peppers or alternatively peppers and eggplant , the cold is served with meat dishes or as Serves condiments and spreads .

Origin and Distribution

Ajvar is particularly well established in the kitchens of the countries of the former Yugoslavia , where it is considered a national specialty. There are different and controversial theories regarding the specific origin of the food. Ajvar is also known in other south-east European countries and Turkey .

In 1996 the Slovenian company Živilska industrija doo from Kamnik failed when attempting to protect the term Ajvar because it was a generic term . In almost all countries of the former Yugoslavia there are cultural and culinary events around Ajvar, some of which are competitive.

For traditional production, red peppers are roasted, peeled and pitted, and gently simmered with a little oil, stirring constantly, until they have dissolved into a homogeneous mass, which can take several hours. It is only seasoned with salt and pepper . When sealed airtight, this ajvar can be kept for a long time.

In modern variants, other ingredients are often used and cooked much shorter. To do this, red sweet peppers or peppers and aubergines are first roasted and peeled in the oven, the peppers are pitted, everything finely chopped, mixed with olive oil and lemon juice or vinegar , peppers , garlic , pepper, salt and finely chopped, steamed onions and possibly aubergines, and mixed for a long time gently cooked until the liquid has almost boiled down.

Similar preparations

Similar preparations are Ljutenica and Letscho and from Macedonia Pindjur (Serbian Pinđur ), which is always made with eggplant and with tomatoes, onions and garlic. The Romanian variant is called Zacuscă ; the Hungarian paste Erős Pista is rather hot. The Russian variant is called Ogonek / Ogonjok ( Russian Огонёк , German small flame or flame ) and includes tomatoes, onions, salt, red pepper, garlic and chilli.
