Lupine rice

Lupine rice is a special preparation of sweet lupine seeds and is the result of a mixture of toasting and sieving processes, which contributes to the improved absorption of vitamins and amino acids in the human body.

Lupine seeds have been considered a valuable food in the Mediterranean for 2000 years due to their ability to provide high quality lupine protein . In Europe they are mainly used as a substitute for imported soy in animal feed.

Since 1997, among the various types of lupine u. a. the blue sweet lupine is approved for commercial cultivation, the seeds of which can also be consumed by humans due to their low alkaloid content.

The word "lupine rice" was first used in 2013 by the food manufacturer SALUVegan by the qualified nutritionist Sami Ebel (born 1972 in Munich ).

Lupine rice is nutritionally more valuable than untreated sweet lupine seeds, as it is not just a mixture of chopped up sweet lupine seeds, but also consists of a total of seven different types of sweet lupine, which are toasted and sifted as a mixture.

In contrast to soybeans, sweet lupine seeds are free from genetic modification. The lupine seeds are similar in their composition to the soybeans, but are much lower in fat, have a significantly lower allergenic potential and are grown on home soil.

Sweet lupine seeds contain no starch and are both gluten and purine free. They consist of approx. 25% fat and 40% high quality lupine protein , u. a. from the essential amino acids methionine and tryptophan .

Production and trade

Sweet lupine seeds are among the richest vegetable sources of protein and are excellent for processing. Sweet lupine seeds are therefore an important component of a vegetarian and vegan diet, but are also consumed in competitive sports and in the raw food sector.

Up to now there have been milk and egg substitutes, bakery products and meat substitutes made from this raw material. Compared to other legumes, the lupine has significantly fewer flatulent substances.
